MARCELO ÁLVAREZ BORDERRE
As the founder of La Carbonera Madrid, he is responsible for selecting the cheeses and wine cellar weekly, as well as managing the shop. Marcelo regularly visits the producers to learn about their production processes and the personal stories of each cheesemaker and winemaker.
You'll see him preparing cheese and wine platters or chatting with customers about cheese and wine (sometimes he gets a little distracted, but he always manages to attend to everyone!). An expert and passionate cheese and wine enthusiast, he has served as a judge at prominent industry events such as Gourmet Quesos , Alimentos de España , World Cheese Awards , Quesos de Madrid , and the Best Idiazábal Cheese Competition .
María Teresa Madrid
As chef at La Carbonera Madrid, Marité offers a unique culinary approach in Spain, incorporating dairy products into food in such a way that all the ingredients in each dish enhance one another. Some call it tantric cuisine , but for us, it's simply harmony .
You'll find her in the dining room explaining her creations to guests or preparing cheese boards… because she loves it and because she's worth it! Trained in Chile under chef Guillermo Rodríguez, Marité has worked at the Chilean Embassy, shared a kitchen with Arzak, and provided delicious catering for numerous events.
DANIELA PRESTA
The conductor of a venue where you'll feel right at home, showering you with attention, warmth, and affection. She also showcases her artistic talent in every detail of the establishment.
Daniela suggests exceptional pairings and explains cheeses like no one else, accompanying you with a smile from the moment she welcomes you until she says goodbye, encouraging you to come back and see us again soon.
ROMINA SALAS
Our latest addition is responsible for the harmonious execution of the dishes in the kitchen and the preparation of the platters, while also attending to the dining room service.
Active, perceptive and armed with her great initiative, Romina has been able to interpret the essence of La Carbonera Madrid and the rest of the team from the first minute.
IN THE BACK ROOM
She works tirelessly to plan, organize, and drive La Carbonera Madrid's online presence, ensuring that everything related to our website runs smoothly. Since joining the team, Dabinchi has propelled us forward rapidly across all technological fronts. She also optimizes our systems, processes, and communications. She's not one for robots and standard AI... her focus is on artisanal intelligence, just like our cheeses and wines!
With her brilliant communication skills, Cova puts us on the map and tells you everything that's happening at La Carbonera Madrid. Without her, it would be much harder for you to get to know us. Cova lays the foundation and convinces you to come so we can then develop our work. She's also our trusted photographer—she has impeccable taste! She has a spectacular studio (CGM Comunicación) and style, understands us perfectly, and her exquisite work anticipates everything that's about to happen at La Carbonera Madrid.
